Celebrate Summers arrival with a cooking class to elevate your grilling game. From a quick marinade that is easy to make and packed with flavor, to more involved ones that enhance the texture and profiles of a variety of cuts of meat. We will also be making a Spanish take on a classic potato salad. Then it will be time to head outside to the grill, go over cooking techniques, and practice your grill skills. We will have libations offered at an additional charge throughout the event.
Cooking Class Menu
Marinades
Rosemary and Black Peppercorn
Copious amounts of peppercorn and fresh rosemary, all tied together with full-bodied Red Wine, Washington ones of course, olive oil, flake salt, and Worcestershire. This French based marinade is great for just about any red meat, that really shines with rack of lamb or tri tip. During class you’ll be trying this marinade on tri-tip.
Apricot Dijon
Apricots and caramelized shallots slowly poached in mirin and white wine. Then pureed with a healthy dose of Dijon mustard, apple cider vinegar, a touch of white pepper and a few other ingredients, to be revealed at the class, to complete the marinade. Pairs great with Pork, Chicken, and Salmon as well. During class you’ll be trying this marinade on a pork.
Coffee and Ancho
Ancho peppers and dark roasted coffee beans ground with toasted coriander and a medley of other Mesoamerican spices to accentuate the sweet earthiness of both the Ancho peppers and Coffee Beans. Then blended with lime juice and agave to round out the flavors and add acidity to help with the tenderization process. This marinade is perfect for skirt or flank steak and a great start to a backyard party with some Latin flair. During class you’ll be trying this marinade on steak.
Sides
Brava Potato Salad
Potato salad reimagined with flavors of Spain and patatas bravas. Smoked Paprika, fresh parsley, roasted sweet bell peppers, accents of sherry vinegar, all held together by a roasted garlic aioli. It can be served chilled or as a warm salad.
